You may already be familiar with El Basque’s Proprietor and Chef, John Colón, in Bonita Springs . . . a fabulous go-to spot for intimate and delicious Basque influenced cuisine. Now, John is happy to announce next week’s opening of his new restaurant, Islas, serving what he defines as “Modern Caribe Cuisine”, a blend of home cooking and “haute cuisine”, inspired by the rhythms of the Caribbean. Born and raised in New York City, John’s parents are originally from Puerto Rico. Brought up eating home cooked dishes originating from Puerto Rico and other Caribbean islands, John is so excited to dedicate this restaurant to flavorful and fun island classics with a modern twist. Dishes such as Mofongo (a Dominican inspired Mashed Plantain) with Shrimp in Garlic Mojo; Pernil, (Pork Roast Caribbean style) served with Arroz con Gandulas; Sancocho (Steak, Chicken, and Pork Stew with Yucca); and Caribbean Ceviche, are just a few to be included on the menu.
A “boutique” style restaurant, Islas pays attention to the details, serving only local and organic produce and proteins such as wild caught snapper and free range roast chickens, all is accentuated by fresh herbs and spices to create flavorful dishes reminiscent of grandma’s kitchen and island favorites. To round out the Caribbean experience, cold beer hailing from the islands and a wonderful selection of wines, are offered to accompany your meal.
