Profile
More than 15 years ago, Chef Anthony Ethuin and his wife, Sandie, took their first steps in the world of luxury hotel and fine restaurant service by attending the renowned Paul Augier High School in Nice, France.
After winning the “Best Apprentice” award for the South of France at the age of 18 and enjoying the honor of doing several events with the world-renowned chef, Alain Ducasse, Chef Anthony would go on to cook at such prestigious places as the Monte-Carlo Bay Hotel and Resort (1 Michelin Star) and the prestigious company Societe des Bains de Mer in Monaco, as well as at the historic Palais de la Mediterrane in Nice (1 Michelin Star).
But after many successful years of service, Chef Anthony and Sandie decided it was time to strike out on their own and open their own restaurant. And as if by destiny they soon came to learn of the Cafe Normandie—one of the oldest French restaurants in Naples, Florida.
With the generous support and continuing participation of their parents, they purchased the restaurant and set off on a new adventure.
Although the Ethuin family comes from the Côte d’Azur region in southern France, they chose to retain the name and identity of Cafe Normandie in honor of its founder, a native of the Normandie region, Mr. Benoit, as other subsequent owners of the Cafe have done throughout the years.
Cafe Normandie is entirely family owned and family operated. For this reason, they are all the more committed to attaining and maintaining the highest standard of excellence.
Chef Anthony and his wife have dedicated themselves to applying all of their experience and training in offering their customers classic French Bistro-style cuisine in a pleasant, friendly atmosphere, using only the best local ingredients and freshest produce; and with his varying Weekend Specials (dishes rarely if ever offered elsewhere), Chef Anthony takes great pride and pleasure in introducing the residents of Naples to some of the most beloved and classic dishes of his native country.
